Northeast Brazilian The Northeast part of Brazil, largely the states of Alagoas, Bahia, Ceará, Maranhão, Paraíba, Pernambuco, Piauí, Rio Grande do Norte, and Sergipe, composes geographically of a slim, fecund coastal plain with ample rainfall in which a great deal of the population is found, an equally slim transition zone labeled the Agreste, and a large semi-arid zone labeled the Sertão, which is influenced by considerable cattle ranches. All types of tropical produce are grown on the coastal plain, with sugarcane and cacao being predominantly ample. Across the State of Bahia the dominant cuisine is Afro-Bahian, which came from plantation cooks improvising on African, Amerindian, and old fashioned Portuguese foods utilizing regionally existing ingredients. Frequent dishes include vatapá, moqueca (both having seafood and palm oil), and acarajé (a savory muffin composed of white beans, onion and fried in palm oil (dendê) which is loaded with dried shrimp, red pepper and caruru (mashed okra with ground cashew nut, smoked shrimp, onion, pepper and garlic). The main staple is a plate of white rice and black beans but other widespread foods incorporate farofa, paçoca, canjica, pamonha and quibebe. In the remainder of the coastal plains there is less African influence on the food, but seafood, shellfish, coconut and tropical fruit are menu staples. Normally eaten tropical fruits in the North-eastern region feature mango, papaya, guava, orange, passion fruit, pineapple, sweet sop, "hog-plum," sour sop, and cashew (both the fruit and the nut). All of these states have their versions in cuisine and way, being Bahia one of the most different of them. In fact, Bahia is the single Brazilian state in which the food is spicy, and restaurants will consult you whether you want your meal “hot” or “cold”, meaning “spicy hot” or not. They use a good deal of of “pimenta” (pepper) and azeite de dende (a particular kind of oil) to cook their meals. Overall, though, most northeastern states will probably use tapioca flour and sun-dried beef (carne de sol). Shrimp and fish are also really popular and cheap. Another feature of northeastern food is the quantity. Often, the portions are truly giving, and a dish can supply two to three people. Several of the favorites from this cuisine are “moqueca de peixe”, acaraje’, vatapa’, tapioca com coco e leite condensado, cashew juice, acerola juice, acai.

Sandwiches are the favorite type of snack in Brazil. While sandwiches are generally a complete meal in North America, they are considered a light snack in Brazil. This is generally due to the way they are prepared, with nominal meats, vegetables and cheeses used. Sandwiches are usually two slices of bread, mayo, some cheese and some meat. Sandwiches aren't the only type of snack available though!

A petite pastel, pao-de-queijo, or a croquete (ground beef breaded and deep fried) are common possibilities as well. Some Brazilians even have sandwiches for dinner, which is always a considerably smaller meal for most Brazilians.

Sandwiches can also be the Sao Paulo “Beirute” and the Southern Brazil “X-burger”. The latter is bigger than a regular cheeseburger and may also be filled with a variety of meats, from chicken, to beef, to pork, and even chicken hearts! Cheeseburger derives from the way Brazilians pronounce “cheese”, which evolved into the shortened version “X” (sheeez). The Beirute is a much larger sandwich. This sandwich is toasted and also much larger than a regular X-burger. It has a Arab influence, as the name “Beirute” suggests.
