Northeast Brazilian The Northeast portion of Brazil, mainly the states of Alagoas, Bahia, Ceará, Maranhão, Paraíba, Pernambuco, Piauí, Rio Grande do Norte, and Sergipe, contains geographically of a narrow, fecund coastal plain with plentiful rainfall in which a large amount of the population is established, an similarly slim transition zone titled the Agreste, and a substantial semi-arid section called the Sertão, which is influenced by vast cattle ranches. All kinds of tropical produce are raised on the coastal plain, with sugarcane and cacao being especially plentiful. Within the State of Bahia the main cuisine is Afro-Bahian, which evolved from plantation cooks improvising on African, Amerindian, and traditional Portuguese dishes using locally existing ingredients. Traditional meals are vatapá, moqueca (both having seafood and palm oil), and acarajé (a salted muffin composed of white beans, onion and fried in palm oil (dendê) which is filled with dried shrimp, red pepper and caruru (mashed okra with ground cashew nut, smoked shrimp, onion, pepper and garlic). The main staple is a dish of white rice and black beans although other widespread dishes include farofa, paçoca, canjica, pamonha and quibebe. In the remainder of the coastal plains there is less African impact on the food, yet seafood, shellfish, coconut and tropical fruit are menu staples. Usually enjoyed tropical fruits in the North-eastern region feature mango, papaya, guava, orange, passion fruit, pineapple, sweet sop, "hog-plum," sour sop, and cashew (both the fruit and the nut). All of these states have their differences in cuisine and style, being Bahia one of the most typical of them. Actually, Bahia is the sole Brazilian state in which the food is spicy, and restaurants will question you if you want your meal “hot” or “cold”, indicating “spicy hot” or not. They use a good deal of of “pimenta” (pepper) and azeite de dende (a particular kind of oil) to cook their meals. In general, however, most northeastern states will probably employ tapioca flour and sun-dried beef (carne de sol). Shrimp and fish are also pretty prominent and inexpensive. Another characteristic of northeastern food is the amount. Generally, the meals are pretty giving, and a dish can supply two to three people. Some of the favorites from this cuisine are “moqueca de peixe”, acaraje’, vatapa’, tapioca com coco e leite condensado, cashew juice, acerola juice, acai.

Bakeries play a significant role in Brazilian lives as fresh bread is frequently used during many meals. Bakeries provide particularly fresh goods, and are preferred over standard grocery stores. Purchasing fresh bread daily is a particularly popular in Brazil. Often there are long lines of people waiting to buy bread that is about to come out of the oven! Bakeries also produce sweet and savory alternatives, including many pastries. Many new bakeries also include cafes providing various kinds of coffee, hot chocolate, tea, and fresh juices to customers who wish to enjoy their freshly baked goods at the bakery. Rosca is typically served in the south, normally in the state of Santa Catarina and Rio Grande do Sul and is cooked from manioc flour. The bread only lasts for short period of time before it gets stale, so don’t buy more than you can devour. You’ll find it baked in large ring-shaped wreaths, typically 8 inches to about 15 inches in diameter. It’s best served with Nata, a butter/cheese found in most stores.
