Northeast Brazilian The Northeast section of Brazil, primarily the states of Alagoas, Bahia, Ceará, Maranhão, Paraíba, Pernambuco, Piauí, Rio Grande do Norte, and Sergipe, constitutes geographically of a thin, fertile coastal plain with considerable rainfall in which a great deal of the population is located, an evenly slim transition zone known as the Agreste, and a large semi-arid area called the Sertão, which is mastered by considerable cattle ranches. All sorts of tropical produce are harvested on the coastal plain, with sugarcane and cacao being mainly plentiful. Within the State of Bahia the primary cuisine is Afro-Bahian, which came from plantation cooks improvising on African, Amerindian, and conventional Portuguese dishes using regionally available ingredients. Traditional dinners are vatapá, moqueca (both having seafood and palm oil), and acarajé (a savory muffin composed of white beans, onion and fried in palm oil (dendê) which is stuffed with dried shrimp, red pepper and caruru (mashed okra with ground cashew nut, smoked shrimp, onion, pepper and garlic). The major staple is a dish of white rice and black beans although other typical dishes incorporate farofa, paçoca, canjica, pamonha and quibebe. In the remainder of the coastal plains there is less African influence on the food, but seafood, shellfish, coconut and tropical fruit are menu staples. Usually enjoyed tropical fruits in the North-eastern region include mango, papaya, guava, orange, passion fruit, pineapple, sweet sop, "hog-plum," sour sop, and cashew (both the fruit and the nut). Every one of these states have their variations in cuisine and fashion, being Bahia one of the most typical of them. In fact, Bahia is the single Brazilian state where the food is spicy, and dining places will question you whether you want your meal “hot” or “cold”, which means “spicy hot” or not. They use a good deal of of “pimenta” (pepper) and azeite de dende (a particular kind of oil) to cook their meals. On the whole, though, most northeastern states shall utilize tapioca flour and sun-dried beef (carne de sol). Shrimp and fish are also highly popular and low-priced. Another feature of northeastern food is the amount. Commonly, the portions are pretty giving, and a dish can serve two to three people. Several of the preferred from this cuisine are “moqueca de peixe”, acaraje’, vatapa’, tapioca com coco e leite condensado, cashew juice, acerola juice, acai.

A little pastel, pao-de-queijo, or a croquete (ground beef breaded and deep fried) are common possibilities as well. Some Brazilians even have sandwiches for dinner, which is always a minimal meal for most Brazilians.

The latter is much larger than a regular cheeseburger and may also be filled with a variety of meats, from chicken, to beef, to pork, and even chicken hearts! The Name cheeseburger comes from the way Brazilians pronounce “cheese”, which evolved into the short hand version “X” (sheeez). The Beirute is a much bigger sandwich. This sandwich is toasted and also much larger than a regular hamburger or cheeseburger. It has a Arab influence, as the name “Beirute” alludes to.
